Most Amazing Oatmeal Chocolate Chip Cookies EVER!

To make these AMAZING, use exact ingredients and no substitutes :) My sister in law gave me this recipe so all credit goes to her, Thanks Kami

Ingredients:

1/2 cup room temperature butter
1/2 cup shortening
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 cups flour
1 1/4 cups quick oats
1 1/4 cups old fashioned oats
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 cups (your favorite) chocolate chips (optional)

Directions:

1. Cream together butter, shortening, sugars, eggs, and vanilla (I like to use my Bosch, Kitchen Aid would work good to, I would not recommend by hand unless that's all you have)

2. Mix together dry ingredients in a separate bowl and slowly add to batter

3. Bake in a preheated oven at 350 degrees for 10-15 minutes depending on oven until golden brown

4. Place on a cooling rack and let cool slightly, ENJOY!!!

Makes about 5 dozen depending on size of cookie scoop :)

Tip: I like my oats mixed, quick and old fashioned you do not have to use both but if you only have old fashioned and want both just put desired amount in a blender for a couple of seconds and voilĂ  you have quick oats.

Pizza Stromboli Recipe (bread maker)

I don't have a lot of little things like store bought frozen pizza dough or bottled pizza sauce on hand and I don't plan my meals ahead or make special trips to the store so I make them from scratch. Also I am currently pregnant so I want it simple! My husband is a really awesome guy but has a very picky pallet so if I post it here it has to be good! This was EASY and VERY good. Not my picture but it looked like that. We served it with salad on the side for greens but you could add olives, green peppers, mushrooms or anything else you like with pizza.


Pizza Dough:

This is from my Welbilt ABM4000 Manual.
Add ingredients in the order listed. All ingredients must be at room temperature. 

3/4 cup water
1 Tablespoon Italian seasoning
1 cup grated Parmesan/Romano cheese blend (or what ever you want Cheddar, pepper jack) 
2 Tablespoons olive oil (I didn't have any so I used vegetable oil)
1 teaspoon salt
2 1/2 cups bread flour (I used all purpose white flour)
1 3/4 teaspoons active dry yeast

Put all ingredients in bread maker  Set bread maker to dough setting and let run (mine takes 1 1/2 hours). When it's done turn it out on a lightly floured surface. Roll out into a rectangle as thin as you desire. 

Stromboli

This is my own recipe I had to use what was on hand so feel free to improvise :)

Pizza dough (recipe above)
1-3.5 oz package Hormel pepperoni (the large ones, there was 21 slices in the package)
1/2 to 1 cup shredded Colby jack cheese, divided
1/4 to 1/2 cup shredded Parmesan/Romano cheese blend  
1/4 to 1/2 cup Mozzarella cheese
1 finely chopped green onion 
Pizza sauce for dipping (recipe below)

Roll out dough into a rectangle as thin as you desire. Leaving 1/2 inch of edge all around. 
Spread pepperoni all over rolled out dough layered in 3 rows down 7 across. 
Sprinkle cheeses over that leaving some of the Colby jack for on top. 
Add green onion and any other topping you desire. 
Roll up jelly-roll style, starting with the long side; pinch seam to seal and tuck ends under. Place seam side down on greased baking sheet. Sprinkle on remaining cheese. 
Bake at 350 degrees for 25 to 30 minutes or until golden brown. 
Serve with Pizza sauce on the side for dipping. Careful its hot.  Refrigerate leftovers.

Pizza Sauce

This isn't fancy but it works.

1-8 oz can tomato sauce 
1/8 cup water
1/2 teaspoon sugar
1/8 teaspoon dried oregano
1/8 teaspoon dried basil
1/8 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/16 teaspoon ground black pepper
1/2 a bay leaf
1/4 teaspoon lemon juice

Combine all ingredients in a small saucepan. Cook over medium heat until sauce starts to boil.
Lower heat and simmer, covered for 30 to 45 minutes or until it is as thick as you like it.
Through away bay leaf and serve.

Easter Wreath


 What you will need:


Oval wreath
Cute plastic eggs
Green Easter grass (mine was paper)
Sparkly Easter grass
Wire
Wire cutters
Glue gun and glue
Cute happy Easter sign (I has this already)
Ribbon
Scissors

Steps:


Take your heated glue gun and spread a lot of glue in one area, quickly take a small handful of green grass and cover area pressing firmly. Repeat this step until all of front is covered in green grass. Do this step again with a little sparkly grass. Add a good size dab of glue to the back of the plastic egg and press onto grass firmly. Repeat with remaining eggs. Use a piece of wire or glue to secure "Happy Easter" sign to wreath. Tie ribbon through a piece of wreath at the top and make a bow to hang it with . Take your scissors and cut long or out of place pieces of grass. Some of the grass will shed off as you pick it up so watch out. Ta Da! Super cute wreath!

Super Yummy Baked Chicken Flautas

My family LOVES these! They are easy, cheap, not too spicy for kids and wimps like me and SUPER flavorful! You can serve these plain or with salsa, sour cream, guacamole, ranch dressing or whatever you like.  Serves 4.

Ingredients:

  • 4 Tablespoons salad oil
  • 2/3 teaspoons dried parsley or 2 Tablespoons fresh chopped parsley
  • 1/2 Tablespoon lemon juice concentrate or juice of 1 lemon
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • 2 Cups raw boneless skinless chicken breasts or tenders (cut into bite size pieces)
  • 4-5 24 inches flour tortillas or more smaller ones
  • 1/2 cup sour cream
  • 1 cup shredded monterey jack cheese
  • A little extra vegetable oil for brushing on

Directions:

Marinate chicken in the first 5 ingredients for one hour in the refrigerator. Then cook the chicken with the marinade over medium-high heat in nonstick pan until cooked through. Mix together cooked chicken, sour cream and cheese. Spoon some of mixture onto each tortilla and roll up tucking in the ends. Place the flautas in a baking dish, brush with oil, as desired (this makes them crispy). Cook for 15 minutes in a preheated 400 degree oven. Carefully with tongs turn the flautas over, brush with a little more oil and cook an additional 7 minutes. Careful these are hot!! let cool a little before serving. Framed Name


Since my friends last name is short this works well. I cut out each letter with my cricut and used dollar store frames. Really easy and I think it's super cute! She said it was the perfect accent for her wall. Also made a great and cheap wedding gift.

Spray paint in the bathroom?

I found a cute kiddie wooden step stool at a yard sale. It was blue and had stickers on it. When I removed the stickers I accidentally removed some of the paint, that made it ugly. I had a garbage can from Target that was white already in there. There also was a gold colored towel bar yuck. I had a can of green spray paint left over from another project and there was green in the bathroom theme already so I put the spray paint to use. I took the towel bar apart and sprayed all 3 things outside. I cut out the turtles with my Cricut.
